Good Manufacturing Practices (GMP) are guidelines that provide a system of processes, procedures, and documentation to ensure a product has the identity, strength, composition, quality, and purity that appears on its label. GMP ensures a product is of consistent high quality, appropriate for its intended use, and meets the requirements of a marketing authorization (MA) or product specification.[1]
Apart from fish processing activities, the peat swamp economic business group or KUPS (Social Forestry Business Group) also carried out Good Manufacturing Practices (GMP) training for fish processing which was also facilitated by Supeni (44) which was held on 14-16 November in Kalawa, Mantaren I , and Buntoi. Social Forestry Business Group (KUPS) as a community-based start-up business in and around the forest. This group was formed with people who care about forests. One of the supports in this program is to empower the community’s economy through KUPS.
Supeni said that GMP is a guideline for producing good food with the aim that producers produce quality products according to consumer demands, which means the quality of the product is guaranteed and safe for consumption. “The usefulness of implementing GMP for business actors is very important to produce and provide safe and suitable food for consumers, provide clear and easy to understand information to the public to protect food against contamination and damage, and maintain or increase international confidence in the food produced, ” explained Supeni (15/11)
Onasis as KUPS Manager of KPSHK said that this fish processing training activity was also GMP training for fisheries business actors. The aim of this activity is not only to improve the skills of peat swamp economic business groups in fish processing, but also cleaning, storing and packaging fish products using fish processing techniques according to food standards.
“Pelatihan GMP ini juga mengajarkan teknik-teknik pemrosesan ikan yang sesuai dengan standar keamanan pangan. Hal ini juga dapat mendorong kelompok usaha untuk menjalankan usaha pengolahan ikan yang berkelanjutan, menciptakan, dan membangun relasi untuk pemasaran ikan segar dan produk olahan ikan bagi kelompok usaha ekonomi rawa gambut perikanan Mantaren I, Kalawa dan Buntoi,” ucap Onasis penuh harap. Supeni menuturkan bahwa aplikasi dari kegiatan GMP merupakan operasi sanitasi dan higienis proses produksi atau penanganan pangan dalam bentuk Standard Sanitation Operating Prosedure (SSOP). Dapat dikatakan juga bahwa SSOP sebagai prosedur yang digunakan oleh industri membantu untuk mencapai tujuan atau sasaran keseluruhan yang diharapkan GMP dalam memproduksi pangan yang bermutu tinggi aman dan tertib. Selain itu penerapan GMP akan meningkatkan kepuasan konsumen dan legalitas usaha/perusahaan terutama untuk mendapatkan sertifikat P-IRT, izin halal, dan MD/izin edar produk.
“Generally there are 8 aspects in the Standard Sanitation Operating Procedure that need to be considered and must be implemented by business actors, namely water safety, cleanliness of surfaces that come in direct contact with food, prevention of cross-contamination, cleanliness of workers, prevention/protection from adulteration, “proper labeling and storage, control and maintenance of employee health, and eradication of pests,” explained Supeni at the training (16/11)
According to Darman, as a training participant, fisheries business actors are very grateful to KPSHK for facilitating this training. The training provided new knowledge and skills in fish processing techniques according to food standards, which initially we only knew how to make, without knowing and understanding the practical/technical practices. which is good for fish processing.
“GMP is used in various industries, including fish processing, to improve product quality, ensure food safety and meet marketing requirements. “The implementation of GMP in fish processing also helps open up business opportunities to enter the global market,” concluded Supeni, ending the training. The Peat Swamp Economic Group as a Fisheries KUPS in Kalawa, Mantaren I, and Buntoi will produce good processed fish according to food standards.
